Elf4Health – Day 1

Well hello there dear friends — how is everyone’s Monday going?? It’s “Meatless Monday” for me – as today is Day 1 of the #Elf4Health Challenge!! (Are you participating? Most people are since there are like 700+ people signed up!!!) So far so good for me – I had leftover cauliflower and roasted garlic soup for lunch along with my usual yogurt/granola/strawberry mix… and the plan is the good old sweet potato chili bake for dinner 😀 No sweat!! Elle and Lindsay paired me up with a pretty awesome “Elf!” – Her name is Gina and we have a ton of things in common — which is so cool — we both live in NY and even work in the same field 😀 We’ve been emailing one another for the past 2 days and have already swapped recipes!!

Sadly, my christmas decorations did not get up yesterday. In fact, the house is kinda of a mishmosh of Fall/Christmas decor at the moment! It’s kinda driving me bananas!!! I really just want my house to look like the Pottery Barn all the time 🙂 … sadly, I’m not a millionaire! I did pick up this little guy though:

Homemade advent calendar

It’s an advent calendar of sorts – I got the original idea off Pinterest (of course) – check out the original idea here— each pocket has a card in it with an activity to do that day 🙂 I have 2 of those brown boards, and I’m attaching them with ribbon. I’m making ours out of scrapbook paper and carstock (and stickets, embellishments, etc) … I’m pretty psyched about it – I can’t wait to show off the finished product!! I love being able to indulge my creative side!!

Did anyone find some amazing cyber Monday deals? I’m really having a hard time coming up with items for gifts – especially for P!!! You’d think that would be easy! I don’t like that it’s stressing me out already! I’m even having a hard time coming up with items that I really, really want or need!! (okay, well I do have some! … like a new yoga mat — mine is quickly falling apart!) Send me some good/unique ideas!

Well, I just wanted to pop in for a quick hello to you all, and give a big shout out of all my fellow elves 🙂 I hope that you are all having a great start to your week  🙂 (I’m working hard on getting my eating back on track, I can’t say I made the best choices over the past 4 days, and my body is feeling it – plus, I know I’m not gonna be happy on weigh-in day!!!)
