Manic Monday?

on August 6, 2012

Well, it’s monday… I’m not really ready for the week to start, but here we go anyway!

I think that’s because my weekend was so busy!! Little re-cap headed your way!

Friday: Girls Night!! It was so amazing to spend sometime with some of my girls… we ordered dinner from a local take-out place (I tried to behave and ordered a very healthy chef salad and some very necessary breadsticks!) and had some wine. Then we headed out to a local movie theater to watch Magic Mike… Oh Channing Tatum… you can dance shake it!

Saturday: Pete headed out early for a soccer game, so I took advantage of the time to get my workout in… I did a little “Biggest Loser Last Chance Workout” and did some abs as well. We then headed to the grocery store… which is a total anomaly since we almost always do our shopping on sunday… but I needed some things to do a little baking 😉 I’m very thankful that Pete and I almost always do our shopping together… I HATE the grocery store. But, I can’t really tell you why! Once we were home again, I made some lemon cupcakes and strawberry filling … this was in an attempt to make sunday less hectic. I also made a huge batch of roasted veggies so that they were ready for the week. We headed out for dinner at Ruby Tuesday’s to celebrate Pete’s brother’s birthday with him and his family… I love Ruby Tuesday’s cauliflower puree…. yummy!! We finished out the evening with a free concert by a local band, Wild Adriatic, at a local ampitheater called Freedom Park … if you’re local, then you know that this place is attached to a summer hotspot, Jumpin’ Jacks!

I was pleasantly surprised with the concert… they are more of a rock band and I’m more of a country music girl… but they played a variety of music and the weather was beautiful, as there was a breeze coming off the water, and I had plenty of bug spray on!

Sunday:  I was up bright and early to finish those special cupcakes — they were for my grandmother’s birthday ! So, I filled the lemon cupcakes with the strawberry filling and then topped them off with lemon buttercream frosting… oh so yummy. I wish I had taken a picture of them, but I forgot 😦 Then we (me, mom, dad, little brother, Pete and grandma) headed up to lake george for a brunch cruise around the lake to celebrate my grandma’s birthday. That turned out to be a pretty interesting experience… mostly because there was a wedding reception on the boat with us… but they didn’t rent out the whole boat… so the first dance and parent dances happenened.. with 50 strangers staring at the bridal party. It felt like we were crashing the wedding without even trying… very strange. The food was also “eh”… but I did get to use some of my sign language with the chef who was making omelets, as he was deaf. I finished out the weekend with soe laundry and ironing, and then watched some olympics with Pete while Puppy Fiona decided to take all her toys out of her basket to play 😉

So, very busy weekend… which makes for a tired Brittany.. and as I was writing this post, I managed to drip coffee all over my desk and calendar. Nice. Therefore, I think some monday inspiration is in order!! I definitely need it!

Happy Monday friends…. make it a good one! 🙂

First off, I love that dog picture in the beginning of the post! Haha, I love your sense of humor. 😉
Also, it’s so cool that you know sign language! The most I can do is spell out my name!
Last, those cupcakes sound AMAZING! Next time you make ’em, be sure to take a picture for me, please. 😛
